Conch Fritters Recipe
Ingredients:
- 1 cup cooked conch meat, finely chopped
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, finely chopped
- 1/2 cup celery, finely chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 large eggs, beaten
- 1/2 cup milk
- 1 teaspoon hot sauce
- 1 teaspoon Old Bay seasoning
- Salt and pepper, to taste
- Vegetable oil, for frying
For the Dipping Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon lime juice
- 1 teaspoon hot sauce

Make the batter: In a bowl, combine conch, onion, bell pepper, celery, flour, baking powder, eggs, milk, hot sauce, Old Bay, salt, and pepper. Mix until just combined.

Fry: Heat oil in a deep skillet to 350°F (175°C). Drop batter by spoonfuls into hot oil. Fry until golden brown, about 3-4 minutes per side. Drain on paper towels.
