Conch Fritters Recipe

Ingredients:

  • 1 cup cooked conch meat, finely chopped
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, finely chopped
  • 1/2 cup celery, finely chopped
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs, beaten
  • 1/2 cup milk
  • 1 teaspoon hot sauce
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper, to taste
  • Vegetable oil, for frying

For the Dipping Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce

Instructions:

  1. Make the batter: In a bowl, combine conch, onion, bell pepper, celery, flour, baking powder, eggs, milk, hot sauce, Old Bay, salt, and pepper. Mix until just combined.

  2. Fry: Heat oil in a deep skillet to 350°F (175°C). Drop batter by spoonfuls into hot oil. Fry until golden brown, about 3-4 minutes per side. Drain on paper towels.

  3. Make the sauce: Mix mayonnaise, ketchup, lime juice, and hot sauce in a small bowl.

  4. Serve: Serve fritters hot with dipping sauce.
