Black Bean Soup Recipe

Ingredients:

  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1 bay leaf
  • 4 cups vegetable or chicken broth
  • 1 tablespoon fresh lime juice
  • Salt and pepper, to taste
  • Chopped cilantro, for garnish
  • Sour cream, for serving (optional)

Instructions:

  1. Sauté vegetables: In a large pot, heat olive oil over medium. Add onion, bell pepper, and garlic; cook until soft.

  2. Simmer: Add beans, cumin, oregano, bay leaf, and broth. Bring to a boil, then reduce heat and simmer 20-30 minutes.

  3. Finish: Remove bay leaf. Stir in lime juice, salt, and pepper. For a creamier soup, blend part of the soup and return to the pot.

  4. Serve: Ladle into bowls. Top with cilantro and sour cream if desired.
