Swamp Cabbage Stir-Fry Recipe

Ingredients:

  • 2 cups fresh or canned hearts of palm, sliced
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Sauté veggies: Heat oil in skillet. Add onion, bell pepper, and garlic; cook until soft.
  2. Add hearts of palm: Stir in hearts of palm and lemon juice. Cook 2-3 minutes.
  3. Season & serve: Season with salt, pepper, and parsley. Serve warm.
