Swamp Cabbage Stir-Fry Recipe
Ingredients:
- 2 cups fresh or canned hearts of palm, sliced
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper
- 2 tablespoons chopped fresh parsley
Instructions:
- Sauté veggies: Heat oil in skillet. Add onion, bell pepper, and garlic; cook until soft.
- Add hearts of palm: Stir in hearts of palm and lemon juice. Cook 2-3 minutes.
- Season & serve: Season with salt, pepper, and parsley. Serve warm.
