Tropical Fruit Gazpacho Recipe
Ingredients:
- 1 cup diced mango
- 1 cup diced pineapple
- 1 cup diced cucumber
- 1/2 cup orange juice
- 1/4 cup red bell pepper, diced
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper
- Fresh mint for garnish
Instructions:
- Blend: Combine all ingredients (except mint) in a blender. Blend until smooth.
- Chill: Refrigerate at least 1 hour.
- Serve: Pour into bowls and garnish with mint.
