Tropical Fruit Gazpacho Recipe

Ingredients:

  • 1 cup diced mango
  • 1 cup diced pineapple
  • 1 cup diced cucumber
  • 1/2 cup orange juice
  • 1/4 cup red bell pepper, diced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper
  • Fresh mint for garnish

Instructions:

  1. Blend: Combine all ingredients (except mint) in a blender. Blend until smooth.
  2. Chill: Refrigerate at least 1 hour.
