This savory pie features ripe tomatoes, fresh herbs, and a cheesy filling in a flaky crust. It’s a delicious way to use summer’s best tomatoes.
Tomato Pie Recipe
Ingredients:
- 1 pie crust (store-bought or homemade)
- 3 large ripe tomatoes, sliced
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil
- 1/4 cup chopped green onions
- Salt and pepper
Instructions:
- Prepare crust: Pre-bake crust at 375°F (190°C) for 10 minutes.
- Layer: Arrange tomato slices in crust. Sprinkle with salt, pepper, basil, and green onions.
- Mix & top: Combine mayo and cheeses. Spread over tomatoes.
- Bake: Bake at 375°F for 30-35 minutes. Cool slightly before slicing.
Variations
- Add cooked bacon or ham.
